Polenta & Cardamom “French Toast”

Polenta for breakfast? You bet! 

This is a non-traditional way to serve polenta that will leave you thinking… Now that was a great idea! 

Slice polenta, dip it in French toast batter, griddle and enjoy with your favorite toppings. Easy, delicious & gluten-free.

Ingredients

1 tube San Gennaro Traditional Italian Polenta, sliced 1” thick
3 eggs
⅔ cup whole milk
1 teaspoon vanilla
¼ teaspoon cinnamon
¼ teaspoon cardamom
1 Tablespoon butter

To serve:
Fresh berries
Nuts
Maple syrup
Powdered sugar

Instructions

Whisk eggs, milk, vanilla,cinnamon & cardamom together in a shallow bowl.

Heat a griddle over medium heat + lightly butter. 

Dunk polenta in the egg mixture, soaking both sides. Transfer to the hot skillet and cook until golden, 3-4 minutes per side. 

Serve with your favorite toppings.
