Sundried tomato and garlic polenta with tomatoes & grilled sausages

This is a great meal that makes use of the vibrant end-of-summer cherry tomatoes & your favorite grilled Italian sausages, served over our San Gennaro Sundried Tomato & Garlic Polenta. This is a five-star meal that is easy to prepare, requires just a few ingredients and is loaded with all of your favorite Italian flavors.

Grab a few pints of cherry tomatoes, pick up your favorite Italian sausages and make some creamy polenta and you’ll have dinner ready in 1, 2, 3.

Ingredients

Polenta:
1 tube San Gennaro Traditional Italian Polenta
1 Tablespoon olive oil
1 cup chicken stock  
¼ cup parmesan, grated

Tomato Sauce:
¼ cup olive oil
1 Tablespoon fennel
1 teaspoon kosher salt
½ teaspoon ground black pepper
4 cloves of garlic, minced
¼ teaspoon red chile flakes (optional)
2 pints cherry tomatoes
2 Tablespoons fresh basil, chopped

1 package of your favorite Italian sausage

Instructions

Make the tomato sauce: In a medium size pot or dutch oven heat olive oil over medium heat. Turn the heat down to medium-low and add fennel, salt, pepper, garlic and chile flakes. Cook for 5 minutes until everything is fragrant and the garlic is just starting to brown. Turn the heat back up to medium-high and add both pints of cherry tomatoes. Cook for 10 minutes over a high heat, stirring occasionally, allowing cherry tomatoes to blister and some may even burst open. Add basil and toss to combine. Turn the heat down to low as you prepare the polenta & sausages.

Make the creamy polenta: Cut 1 tube of San Gennaro Sundried Tomato & Garlic Polenta into 1” cubes. Place the cubes of polenta in a medium sized saucepan and cover with chicken stock. Cook on medium heat, stirring frequently, until the cubes of polenta have softened and broken down. This should take about 10 to 15 minutes. Lower the heat to simmer and stir in the parmesan.

Prepare Italian sausage according to package instructions. Let cool. Slice at a bias.

Time to enjoy! In shallow bowls, serve creamy polenta topped with a spoonful of cherry tomato sauce and sliced Italian sausages. Garnish with fresh basil and parmesan.
