Polenta Caprese

Caprese salad on polenta rounds

This simple and refreshing appetizer comes together easily and is guaranteed to be enjoyed by everyone.

Caprese salad is a favorite flavor combo to eat in the summer. This simple and refreshing appetizer comes together easily and is guaranteed to be enjoyed by everyone. 

Grilled polenta is topped with fresh tomatoes, soft mozzarella and finished off with basil & a balsamic glaze. 

This appetizer is best served fresh off the griddle and it won’t last long. Enjoy!

Ingredients

1 tube San Gennaro Basil & Garlic Polenta, sliced 3/4” thick
2 Tablespoons olive oil
9 slices fresh tomato
9 slices fresh mozzarella cheese
9 large leaves basil
2 Tablespoons balsamic glaze
Salt and pepper

Instructions

Pre-heat a grill or large skillet to medium heat.

Place polenta rounds on a platter. Brush olive oil onto each side of the polenta.

Place polenta slices on the grill or in the skillet for 8-10 minutes per side, and cook until nice and golden. Adjust heat as necessary.

Return polenta to platter and layer each round with a slice of mozzarella, a slice of tomato, salt & pepper to taste, basil, and finish with a drizzle of balsamic glaze.

Serve immediately & enjoy.
