Pesto Polenta with Grilled Sausages & Burrata

This Italian-inspired polenta with pesto, burrata, and grilled sausages is the ultimate answer to lunch, an appetizer, or a light dinner. Crispy polenta rounds are topped with homemade green pesto, creamy burrata, and grilled sausages. Finish it off with a drizzle of olive oil and freshly cracked black pepper for extra flavor. Yum!

Start by making fresh pesto in a food processor. Next, make a batch of griddled polenta. Once the polenta is cooked, arrange it on a platter, top it with green pesto, add burrata with grilled sausages, and enjoy!

Creamy burrata and basil pesto make for a fun topping over crispy polenta rounds, making this a tremendous gluten-free dish that will surely be a crowd-pleaser.

Ingredients

Griddled Polenta:
1 tube San Gennaro Polenta - flavor of choice
2 Tablespoon olive oil
Salt & pepper to taste

Pesto:
2 cups fresh basil leaves
4 tablespoons lemon juice
4 cloves garlic, peeled
½ cup pine nuts, toasted
½ cup parmesan, grated
Salt and freshly ground black pepper, to taste
½ cup olive oil

To serve:
Burrata
Grilled Sausages

Instructions

Make the pesto:
To make the pesto, combine the pine nuts, lemon juice, garlic, salt, and pepper and pulse until well chopped. Add the basil and pulse until combined. With the food processor running, drizzle in the olive oil and pulse until combined. Add the parmesan cheese, if using, and pulse to briefly combine.

Griddle polenta:
Just before you are ready to eat, prepare the polenta cakes. Griddled polenta recipe can be found here

To serve:
Carefully place polenta rounds on a large platter. Cover in pesto, place burrata in the middle. Surround with grilled sausages. Enjoy
