There are many great ways to prepare polenta. Creamy polenta is a great way to take our basic polenta and have a flavorful springboard for various dishes.

Are you looking to elevate your kitchen game? This delicious creamy polenta is healthy, vegetarian, and gluten-free—most importantly, it’s super simple to make!

Serve creamy polenta alongside your favorite soup or stew, use it in place of pasta or potatoes, think of it as a side dish or have it be the main event and craft your meal around it.

We recommend using an immersion blender when preparing this dish to break up the polenta more easily and obtain the ultimate creamy texture. No immersion blender? No problem. Feel free to break up the polenta using the back of a wooden mixing spoon.

Ingredients

1 tube San Gennaro Traditional Polenta
1 cup chicken broth (or stock of choice)
1 Tablespoon olive oil
1/2 cup Parmesan cheese, shredded

Instructions

Cut polenta into small, thin slices. Place the cut polenta into a small saucepan and cover it with broth and olive oil.

Cook over medium heat, frequently stirring until the cubes of polenta have softened and have started to break down - about 10 minutes or so.

Using the back of a wooden spoon or an immersion blender (our recommendation), break up the remaining chunks of polenta and make the mixture smooth, thick, and creamy.

Add parmesan and stir until melted and combined.

Serve alone or alongside your favorite dish, and enjoy!
